Chocolate shavings are a widely used decoration on cakes and pastries, and the classic finish for chocolate truffles. Making them by hand is time-consuming and laborious. A chocolate shaving machine does it faster, more safely and more hygienically, and produces uniform shavings in the shape and thickness you choose.

10 kg of couverture in 8 minutes

The Mol d’Art chocolate shaving machine processes two 5 kg blocks of couverture at the same time. That way you turn 10 kg of chocolate into shavings in barely 8 minutes. The shavings are collected in food-grade plastic containers. An added benefit: the chocolate is not exposed unnecessarily to light and air.

Do you work with smaller quantities? The compact tabletop model handles blocks of up to 2.5 kg and fits into any workshop.

Shavings made to measure

The thickness of the shavings is easy to adjust. And with separately available blades you can produce other shapes of shaving as well:

• Standard blade: a continuous cutting edge for the longest shavings.
• 5, 10 or 20 mm blades: the cutting edge is interrupted every 5, 10 or 20 mm, for narrower shavings and curls.

The blades are easy to fit and just as easy to remove again.

Simple and safe to operate

An automatic return ensures that the machine comes to a stop by itself, so you can refill it easily and safely. You control everything from a handy control panel with large push buttons.

Built to last

The chocolate shaving machine is built entirely from stainless steel and is driven by a silent yet powerful electric motor. It stands on a base with swivel castors and is supplied with two collecting containers.

Tips for an efficient workflow

• Work with blocks at room temperature. Chocolate that is too cold crumbles; chocolate that is too warm smears.
• Set the thickness first using a small piece, and only then load the machine fully.
• Use the shavings straight away in your truffle line: a truffle table automatically rolls enrobed centres through the shavings.
• Store shavings sealed, cool and in the dark, away from strong odours.
